SPICED ROAST POTATOES W/ FATIMA'S AIOLI

Our signature roasted garlic aioli with a hint of chilli. A meal time game changer, it’s good on everything be it freshly baked bread, meat, fish or vegetables. A perfect pair in our Fatima’s spiced roast potatoes recipe.

Ingredients

  • 1kg agria potatoes
  • 1t ground cumin
  • 1t ground coriander
  • 1t paprika (sweet)
  • 1t turmeric powder
  • 1 x zest of 1 lemon
  • 2t table salt
  • 2 x 12cm sprigs rosemary destalked & finely chopped
  • 1/4 cup canola oil
  • Flaky sea salt & freshly ground black pepper
  • 2T Fatima’s Aioli

Method

  1. Preheat oven to 180 degrees on fan bake. Peel and chop potatoes into 4cm cubes.
  2. Mix together oil, all spices, lemon zest, table salt and half the chopped rosemary.
  3. Toss potato cubes in the oil mix and roast in a large shallow oven dish for approximately 35 minutes.
  4. Turn after 15 mins. Remove when crisp on the outside, sprinkle with flaky sea salt, ground pepper and fresh rosemary.
  5. Serve with a generous dollop of Fatima’s Aioli.
