A vegan toasted cashew and coconut satay. Served best gently warmed. We love a generous dollop with chicken, seafood, tofu and vegetables. Delicious in our Fatima’s satay skewers recipe.
SATAY CHICKEN SKEWERS
Ingredients
- 500g chicken tenderloins
- 3T Fatima’s Chicken Marinade
- 1/2 cup Fatima’s Satay Sauce
- 1/2 cup natural yoghurt
- 20g chopped destalked mint leaves
- Juice of 1/2 lemon
- Flaky sea salt & freshly ground black pepper
Method
- Season and toss the tenderloins in Fatima’s Chicken Marinade before threading onto metal skewers.
- Cook on a hot BBQ or griddle pan with a drizzle of oil for 4-5 minutes on each side.
- Leave to rest for five minutes.
- Mix yoghurt, ¾ of the mint leaves and lemon juice together then season.
- Serve cooked skewers with a dollop of gently heated Fatima’s Satay Sauce and minted yoghurt.
- Garnish with the remaining mint leaves.
