SATAY CHICKEN SKEWERS

Ingredients

  • 500g chicken tenderloins
  • 3T Fatima’s Chicken Marinade
  • 1/2 cup store bought satay sauce
  • 1/2 cup natural yoghurt
  • 20g chopped destalked mint leaves
  • Juice of 1/2 lemon
  • Flaky sea salt & freshly ground black pepper

Method

  1. Season and toss the tenderloins in Fatima’s Chicken Marinade before threading onto metal skewers.
  2. Cook on a hot BBQ or griddle pan with a drizzle of oil for 4-5 minutes on each side.
  3. Leave to rest for five minutes.
  4. Mix yoghurt, ¾ of the mint leaves and lemon juice together then season.
  5. Serve cooked skewers with a dollop of gently heated satay sauce and minted yoghurt.
  6. Garnish with the remaining mint leaves.
