BBQ LAMB RACK
Ingredients
- 2 lamb racks (8 cutlets each)
- 2T Fatima’s Lamb Marinade
- 1/2 cup natural yoghurt
- Juice of 1/2 lemon
- 20g chopped destalked mint leaves
- 2t table salt
- Flaky sea salt & freshly ground black pepper
- 2T Fatima’s Spiced Nuts
Method
- Cut the lamb racks into 2 cutlet servings, season and coat with Fatima’s Lamb Marinade.
- Cook on a hot BBQ with a drizzle of oil for 3-4 minutes on each side.
- Cover with foil and rest for five minutes.
- Meanwhile, stir ¾ of the mint leaves through the yoghurt with lemon juice, salt and pepper to taste.
- Serve lamb with a dollop of minted yoghurt and scatter the remaining mint leaves. Zhoosh with a sprinkle of chopped Fatima’s Spiced Nuts.
