BBQ LAMB RACK W/ MINTED YOGHURT

BBQ LAMB RACK

An earthy blend of spices, yoghurt and honey that perfectly matches lamb's robust flavour. Rub on your choice of cut and slow cook, barbeque or roast to your heart's content. 5 serves per pouch.

Ingredients

  • 2 lamb racks (8 cutlets each)
  • 2T Fatima’s Lamb Marinade
  • 1/2 cup natural yoghurt
  • Juice of 1/2 lemon
  • 20g chopped destalked mint leaves
  • 2t table salt
  • Flaky sea salt & freshly ground black pepper
  • 2T Fatima’s Spiced Nuts

Method

  1. Cut the lamb racks into 2 cutlet servings, season and coat with Fatima’s Lamb Marinade.
  2. Cook on a hot BBQ with a drizzle of oil for 3-4 minutes on each side.
  3. Cover with foil and rest for five minutes.
  4. Meanwhile, stir ¾ of the mint leaves through the yoghurt with lemon juice, salt and pepper to taste.
  5. Serve lamb with a dollop of minted yoghurt and scatter the remaining mint leaves. Zhoosh with a sprinkle of chopped Fatima’s Spiced Nuts.
